What has leaves that
are swords and fruits that are all eyes ? The pineapple, of course. The fruit
varies considerably in size and color and is found in most of the tropical
countries. Besides being delicious and versatile and an excellent source of
vitamins A, C and to a lesser extent, B, the pineapple is also an aid to
digestion and relief for acid dyspepsia. A protein-digesting enzyme extracted
from the stem can be employed as a meat tenderizer, a beer clarifier and an
anti-inflammatory drug.
In Taiwan and the
Philippines, the peels discarded during the canning process are pressed to
make vinegar. The shells, shredded and kiln-dried, make nutritious cattle
food. The tough, sword-like leaves yield a fiber that is woven into a
delicate, semi-transparent cloth in the Philippines. Mixed with straw and
bamboo, the leaf fibers are also used to make paper for Chinese painting.
By-products from the manufacture of juice include liquid sugar used in
caning, ascorbic acid to keep frozen peaches from turning brown, and citric
